Stellenbosch Hills is an award-winning wine cellar with 15 producer members representing a broad spectrum of terroirs in the famed heartland of South Africa’s greatest wines.
The grapes are sourced from vineyards owned and maintained by 15 independent producers located around the world-famous wine region of Stellenbosch. It lies at the foot of the Cape Fold Mountain range, which not only provides soils favourable to viticulture, but also ideal micro-climates. This diversity of rich agricultural soils paired with the moderate, Mediterranean-style climate, creates the best conditions for top-quality grapes and award-winning wines.
The Stellenbosch Hills cellar processes some 8 000 tons of grapes per year. This comprises a wide variety of cultivars.
Tasting Notes
Gorgeous ripe blackberry, plum and black currant aromas and flavors are enhanced by a French oak; spice, notes vanilla and cigar box. The wine is full-bodied with nice concentration on the palate, revealing juicy tannins, ripe fruit and oak on the palate, ending with a lingering finish. A wine that can pair with a range of dishes, from pasta to red meat.
Method
The Cabernet Sauvignon grapes are hand-harvested at optimal ripeness, where aromatics and sugar/acid is in perfect balance. After fermentation the wine matures for 16 months in 20% new French oak barrels and the remainder in 2nd and 3rd fill French oak barrels. Enjoy now or within five years from vintage.
