As early as 1494, whisky was being distilled at the Lindores Abbey site- historical documents have shown requests from King James IV for the Lindores Monks to turn malt into ‘Aqua Vitae.’ Since then, Lindores has been revitalized and refreshed, having built a distillery across from the original Abbey site. Production began at the end of 2017, and 2021 saw their first single malt release!
Tasting Notes
From the distillery: On the nose, mellow fruity apricot jam, toffee notes and a hint of cinnamon combined with butter and custard. On the palate, sweet and spices. Mellow plums and red berries, treacle, cinnamon spice and a pleasant woody smoky note. Very smooth, silky texture. The finish is medium to long with spices, honey and caramel notes.
Method
The second release in the the Casks of Lindores series from Lindores Abbey distillery. This series was created to showcase the award winning spirit of Lindores Abbey distillery and the three core cask types used to mature single malt at the distillery. This release has been matured exclusively in STR (shaved, toasted & re-charred) red wine barriques and bottled at 49.4% vol.
Our Thoughts
Nose: Strawberry jam on brown bread toast, blackberry pie. Concentrated and full of depth.
Palate: Nose follows right through to the palate. Rich and dense, it tastes like pies and toast.
Finish: Baking spice, red berries and a touch of sweetness just at the end.
