Tasting Notes
Subdued sweet smoke that reminds us of a fireplace, with notes of overripe fruits. It is herbal and in the end slight minty with hints of violets and pineapple.Long persistence of baked pineapple with notes of coconut, roses, and freshly cut herbs. On the mid-palate, ripe peach and cinnamon with hints of white pepper and a fine flavor of sherry jelly at the end.
Method
The agave espadin is matured seven years before being roasted in conical earthen ovens and crushed on a traditional horse driven stone press. Fermentation in pine and oak before double copper pot distillation. It is distilled and bottled without any additives.
