Highland Park is truly in a realm of its own. Located on the isolated Orkney Island they are heavily influenced by Norse culture which is reflected in their bottlings. Balance is key with Highland Park, perfectly mingling fruit, sweetness and smoke on all their expressions. Coastal influence comes through and you can sense the waves breaking on the rocks and misting the malting barley in every taste. In their words “the salt spray means there’s never been trees on Orkney, leaving only Heather, and because of that the peat is different, and because of that the aroma when it’s burned is different, and that makes Highland Park.”
Tasting Notes
From the distillery: A sophisticated medley of ripe cherries dusted with bittersweet cocoa, freshly harvested honeycomb and candied orange peel. There’s a whisper of Orkney’s salty seaspray in the aromatic peat smoke.
Method
Hand turned malted barley is dried in kilns that have stood the test of time. The youngest of Highland Parks Kilns is just over 100 years old. Matured in a high proportion of first-fill sherry seasoned European and American oak casks, bottled at 43%.
Our Thoughts
Nose: Date, fruitcake, and malt. Caramel drizzled red delicious apple with some added blackberry and raspberry.
Palate: Chocolatey, malty, round, rich, full-bodied. Cinnamon. Charcoal smoke.
Finish: Red delicious apple, smoke, dark chocolate.
