The origins of the domaine date back to 1928 in Davayé, when Joanny Collovray settled in this small village in the south of Burgundy a few kilometres west of Mâcon, farming the land, making goat’s cheeses and growing various crops, including vines. He was a tenant farmer, making wine on the property and merchants took care of selling it. In 1956 his son Henri succeeded him and maintained the practice of polyculture. He extended the family’s vine holdings by purchasing a few parcels in the Mâcon-Davayé appellation. His son Christian began working in the vines at the age of 16.
In the mid 1980s Christian Collovray and his childhood friend and neighbour, Jean-Luc Terrier along with their wives took over the domaine and this is really where the modern story of Deux Roches began. Today their adult children have come on board and the legacy of Deux Roches continues. Deux Roches wines are pure expressions of Chardonnay on limestone clay soils, marked by minerality.
Domaine Deux Roches is situated in the heart of the Mâconnais landscape, in the village of Davayé, with an extraordinary view of the rocks of Solutré and Vergisson, together these “rocks” have been classified as a national natural historic site and they are inspiration for the domaine’s name and emblem. They have a total of 63 hectares of vines in various Mâconnais villages.
Tasting Notes
This is a pure expression of Macon Chardonnay. This cuvée gives off a floral scent reminiscent of honeysuckle and acacia flowers. Once in the mouth, the juice reveals itself to be both firm and fat, the attack is round, delicately structured and mineral. A gentle citrusy bitterness lingers on the finish. Overall fresh, incisive, pure as well as rich and ripe, full of liveliness and marked minerality.
Method
This wine is a selection of plots located in the heart of the Saint-Véran appellation. These chalky terroirs dating from the Jurassic are perfect for promoting the expression of Chardonnay. This is the first wine produced at Deux Roches in 1983. The grapes grow on well exposed clay limestone soil. After harvest, the grapes are loaded by gravity into pneumatic presses. The presses are slow and long
in order to delicately extract the juices and thus preserve the aromatic finesse. Then the musts are cooled and decanted. The vinification takes place in stainless steel tanks at controlled temperature. Depending on the vintage, malolactic fermentation is desired or not. The aging takes place on fine lees until spring. From picking to bottling, the use of inputs such as SO2 is limited as much as possible.
