Bodegas Canopy is located in the town of Camarena, 40 kilometers from Toledo and 70 kilometers from Madrid. They farm organically and are especially proud of their organic old vine Grenache grapes in the Sierra de Gredos. The vineyards are planted at a high altitude on silicon-granite soils.
The Bodegas Canopy team is made up of 3 people: Alfonso Chacón, Belarmino Fernández and Belén Hita. Alfonso and Belarmino, the founding partners, have been working on this venture since 2003. In September 2021, Belén Hita joined the team as a permanent member. All three are enologists and although each has a different role to play at the winery, they always work together to make important decisions.
Tasting Notes
It’s a red wine with a deep cherry color. The nose is marked by the common characteristics of Syrah of black fruits and Mediterranean herbs, nuanced by the fine notes of its aging in French oak. The nose is complex and offers smoky, meaty hints with dark fruits, menthol and minerals. The mouth remains fresh and offers well rounded tannins and a long finish.
Method
This wine is made from 100% Syrah from 35 year old vines trellis trained vines grown on sandy soil. The grape is well suited to the dry conditions of the Méntrida region in the province of Toledo, Castilla La Mancha. The continental climate experiences great differences between hot daytime temperatures and cooler evening temperatures; aiding in the maturation of the grapes while ensuring that the acid levels are balanced. The sandy soil on which the vineyard lie at an altitude of 400 meters is ideal for the fruit to reach its peak ripeness. Pre-fermentation cold maceration. Alcoholic fermentation at a controlled temperature with 15 days of vatting. Malolactic fermentation in barrels. Unstabilized, unfiltered.The wine ages for 12 months in 500-litre French oak barrels.
