Lightfoot & Wolfville is owned and operated by the Lightfoot family who have been farming in the Annapolis Valley for eight generations. Lightfoot & Wolfville brings a light touch and enlightened approach to both the agricultural and artisanal aspects of viticulture and winemaking. They work in harmony with nature and letting the land offer up its innate best, without subjecting it to aggressive inputs. The winery is located on the home farm site, this land has been in Michael’s family for four generations.
Tasting Notes
Pale yellow gold in the glass. Gently complex nose with suggestions of lemon tart, tangerine rind and almond croissant, layered over a briny saline core. The palate is dry with hints at melon, beeswax and marjoram. The silky, textured mid-palate is indicative of the 10 months spent on lees in foudre. Pairing suggestions include roast pork loin with squash purée, white bean soup and lobster thermidor.
Method
The inaugural iteration of this cuvée, representing a pivotal juncture in the evolution of Lightfoot’s Home Farm Riesling block. Farmed biodynamically, this vineyard is meticulously maintained by hand to optimize ripening with extensive canopy management including fruit zone leaf removal and cluster thinning.
Hand-harvested on the 23rd of October, a relatively early pick for this variety given the warmth of the 2020 growing season. A rigorous hand-sorting took place before whole cluster pressing with a long, specialized press cycle. Primary fermentation with indigenous yeasts took place over six months in Stockinger (Austria) foudre, providing layers of complexity, depth and texture. A full malolactic fermentation helped to naturally soften the bright, cool climate acidity. Aged a total of ten months on lees in foudre before bottling on September 9th 2021 with minimal sulphur addition. Aged in bottle a further 12 months before release. This is a dry Riesling with just 3.6 g/L of RS.
