Bruce Ewert moved his young family to Nova Scotia in 2004 with the intention of crafting traditional method sparkling wines in an idyllic and tranquil environment. The estate vineyards and the winery is now a certified organic winemaking facility.
Tasting Notes
Expect a dry Tidal Bay, with notes of mango, citrus, mineral and slight saline quality. This wine makes the perfect pairing for oysters with a squeeze of lemon, ceviche, fried haddock or cod, fresh goat cheese or greens in a tangy vinaigrette.
Method
This is an organic Tidal Bay that is one of the driest of the Tidal Bays on the market. It showcases the Nova Scotia terroir and this one highlights the unique estate terroir at L’Acadie Vineyards in the Gaspereau Valley. The L‘Acadie Blanc grape is well suited to the gravelly soil. One can perceive the enhanced minerality and slight salinity from schist, sandstone, an ancient seabed, which is a signature of L’Acadie Vineyard’s wines.
The grapes were harvested in two stages; the first pick in September from a block traditionally sourced for Prestige Brut Estate with a deeper layer of humus-rich top soil brings acidity and citrus flavours, and a later pick from another block fully complements the freshness with richer tropical notes such as mango. This Tidal Bay is a blend of two different blocks of L’Acadie Blanc.
