Maison Bruno Paillard was born from its founder’s desire to create a champagne that exemplifies balance and purity, one that can only come from the perfect “assemblage,” or blending of diverse crus, grape varieties, and vintages. This constant desire to capture the quintessential finesse and elegance which champagne can bring when it is served with love and care is what separates Paillard from its competition.
The vineyard team, led by Mathieu Pingret, uses sustainable viticulture practices; no herbicides or pesticides are used, ploughing is performed, partial grassing takes place, regular analysis/specific approaches to each plots is carried out, and only certified organic fertilizers are used. Promoting biodiversity is at the core of the maison’s vineyard work, allowing the viticultural team to detect possible mildew attacks (roses are planted to help catch things like mildew before it’s seen on the grape vines) and other detrimental changes that good result in poor vineyard health.
Tasting Notes
In the glass, the wine pours a deep, golden colour. On the nose, honeycrisp apple, lemon, and apricot occupy the bouquet. On the palate, those flavours carry through, with more lemon curd than simply citrus juice; mouthwatering acidity with lively mousse, and chalky minerality round out the finish.
Method
Made from 45% Pinot Noir, 33% Chardonnay, and 22% Pinot Meunier, the wine contains exclusively first pressing juice and 20% was in barrel for the first fermentation; up to 50% of the final blend contains reserve wines of 25 different vintages dating as far back as 1985. Aged three years sur lie, then a additional five months (minimum) after disgorgement. Dosage is 7 g/L.
